Our pizza dough is made with our own wild yeast and mixed by hand, then fermented for about 10 hours! True Neapolitan pizza is cooked in a wood fired oven with an average hearth temperature of 905 degrees. Though we are a long way from Campania, we try our best to emulate the master pizzaioli of the region.

Most of our pastas are handmade. Our fresh pasta is made in the style of the Piedmont region in northwest Italy, with just egg yolks, 00 flour, a pinch of salt, and a scant amount of olive oil. Many of our pasta dishes are inspired by staples in places such as Alba, Asti, & Turin.
